Burrito's baby!


Last night L-whack and I gobbled up the choc chip cookies (they were gooooood!) and enjoy some quick and easy burrito’s for dinner.

L-whack Ess Mick Burritos
2 x carrots
1 can chickpeas
1 can lentils
1 can 4-bean mix
1 800g can tomatoes
1 400g can tomatoes
1 sachet burrito mix
Coriander

Dice carrots and place in pan. Add beans etc, tomatoes and allow to simmer to 10-15 mins.
When most of the excess liquid has evaporated, add the burrito mix and stir til thickened to your liking.
Stir through coriander and serve!

I’d like to make my own burrito spice mix, but have yet to come across a decent recipe – any suggestions are welcome.

The burrito’s may have been followed by a walk down at the beach and finished with a couple of lines of Whitakers dark peppermint chocolate…
